The golden-syrup and oat biscuit baked for over a century — chewy in the middle, crisp at the edge, and utterly reliable.
Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup desiccated coconut
- 3/4 cup brown sugar
- 125g butter
- 2 tbsp golden syrup
- 1 tsp bicarbonate of soda
- 2 tbsp boiling water
Method
- 1
Combine oats, flour, coconut and sugar in a large bowl.
- 2
Melt butter with golden syrup over low heat.
- 3
Dissolve bicarb in the boiling water, add to the butter mixture — it will foam — then pour over the dry ingredients and mix well.
- 4
Roll tablespoons into balls, place on lined trays and flatten slightly.
- 5
Bake at 160°C for 12–15 minutes: less for chewy, more for crunchy.
- 6
Cool on trays for 5 minutes to set before moving to a rack.
